Daily activity #8 (english version)
Hello guys,
Today we come at 06:00 am, to make the products we sell. Today we sell banana chocolate, rice bowls and sandwich, for faster completion, then we divide tasks such as rice bowl products, sandwiches, chocolate bananas, some sell, and some specifically for wrapping. We finished selling at around 09:00 am.
After we sell, we enter the class to receive what direction and recipe will be made. What we're going to make is sour dough and sweet bread.
Recipe sour dough
Ingredient:
- 700 gr flour
- 250 ml water
- 1 sdt salt
- 75 gr leaven
Step:
- mix all ingredient, except salt.
- keep the dough for 1 hour.
- then, enter salt.
- proofing for 30 minutes.
- shape then bake.
Sweet bread
Ingredient:
- leaven
- 3 pcs egg
- 75 gr butter
- 500 gr hard flour
- 90 gr milk powder
- 50 gr sugar
- 5 gr salt
- 30 ml water
Step:
- mix hard flour, milk powder butter dan sugar.
- Then, put egg and leaven.
- after that, enter the water.
- keep at room temperature for 1 hour.
- mixer until smooth, then put in the mold.
- proofing for 90 minutes.
- then put it in the oven.
We also prepare for breakfast on thursday in the rector. Today we only make croissant, puff pastry and chocolate cheese tart. The only chocolate cheese tart we can make today is 28 seeds, while we have to make 80 pax. So we will continue tomorrow. The chocolate cheese tart we made took quite a long time because the mold was also a little so we waited until it was finished, then we could continue again.
